Hi, I’m Eboni Dionne Palmer

Certified Health Coach, Culinary Wellness Expert & Food is Medicine Advocate

Helping busy professionals heal from chronic conditions through integrative coaching & soulful nourishment

My journey to health and wellness wasn’t linear—it was born in layers of loss, awakening, and grace. One of the most defining moments of my life was losing my father to Multiple Sclerosis. His absence left a space that no diet, title, or accomplishment could ever fill. For a long time, I carried that grief quietly, using busyness and burnout to mask what my soul was aching to express: the need to slow down, feel, and heal.

In that sacred unraveling, I began to see my health not as a checklist, but as a compass. I explored new ways to nourish myself—body, mind, and spirit. I found strength in stillness, clarity in prayer, and healing in reclaiming ancestral wisdom and holistic practices. My father’s legacy became the heartbeat of my journey—a reminder to live fully, love deeply, and walk in truth.

Now, I help others turn their pain into purpose, their chaos into clarity. This isn’t just wellness—it’s remembrance, resilience, and rebirth.

With over 20 years of professional experience, I’m a Certified Health Coach through the Institute for Integrative Nutrition, a Culinary Nutritionist, and a Master Trainer of Stanford University’s evidence-based Chronic Disease Self-Management Program. I also hold a Master of Public Health from the University of North Texas Health Science Center and a B.S. in Biology from Langston University.

As the Founder of reBirth of Food and Journey to a Dream, I blend evidence-based coaching, trauma-informed care, and plant-forward culinary experiences to help busy professionals—especially those struggling with chronic illness—restore their health in a sustainable, deeply personal way.

Clients describe me as warm, knowledgeable, and someone who makes wellness feel doable and down-to-earth. Whether through a powerful coaching session or a healing meal, I show up with compassion, clarity, and the belief that the body can do amazing things when we give it what it needs.

Outside of coaching, I’m a proud mom to a young adult son, a creative spirit, and a lifelong learner who expresses joy through food, art, and connection.
